In El Salvador, producer Fernando Lima owns several farms, including Santa Elena, where this Pacamara lot comes from. Nestled between Los Andes and Los Volcanes national parks at 1850m, the farm’s volcanic soil was enriched even more by the Ilamatepec eruption. Fernando oversees every stage with his own wetmill, and only the best cherries—selected through 5 sorting passes – are processed.
